After everything we have experienced, I can finally share some good news. At last, we were able to build our second floor!

For those who have been following my previous stories, you already know how difficult our situation was. Flooding has always been one of our biggest problems. There were times when we had no choice but to leave our home and evacuate. It was exhausting and emotionally difficult, especially when we had to think about our children and our belongings.

That is why having a second floor means so much to us. We no longer have to leave our house every time the floodwater rises. We finally have a place upstairs where our family can stay. After all the struggles, this improvement feels like a little light after a very dark experience.

https://files.peakd.com/file/peakd-hive/usagigallardo015/EqHxsbBB2UBfhnMejz9o22A9dtUSnyZicgosKohD4Dd6rG1tMH62eZGxi2QsJHJdd1y.jpg

As you can see in the pictures, the house was still messy during construction. There was still water on the ground floor, but the work had to continue. My brother-in-law suggested using tubular steel for the structure instead of building everything with concrete. Using cement, sand, and gravel would have been more difficult because of the water situation. So they worked with steel and welding instead.

I really felt sorry for my brother-in-law because welding was not easy. His eyes would become red after working for hours. Another difficult part was bringing the roofing materials upstairs. We even had to borrow another boat just to transport the long sheets of roofing materials.

https://files.peakd.com/file/peakd-hive/usagigallardo015/EouBCDjerUw5dBLYPdR498MP1Qo2ZPX4CWCTPXe8Hkjhszjqz6c47pbD4rQac1d4t28.jpg

https://files.peakd.com/file/peakd-hive/usagigallardo015/EqfHKAwDQtT7pGiHJRKPRHBy1n2YUYi2K23DxhqHaqzz3WAX5RH3fkv3yGiew9Pb2wf.jpg

https://files.peakd.com/file/peakd-hive/usagigallardo015/Eq3847YG3vvEszEmQXpfqyp9dNiZDoxxwCKy3XyNucNaQYK31xz9TNEbeq1WqGZbU6T.jpg

https://files.peakd.com/file/peakd-hive/usagigallardo015/Eq37xmTPpKYvv4ir8VqJi7J7udKqv4FexszLGcsyyxvkkVDZ7pi6CXCm8UDX2MrLFBp.jpg

All the construction materials had to be unloaded near the highway first, then brought to our house by boat. Carrying the roofing sheets was especially challenging because they could not be bent or damaged. My husband, brother-in-law, and son carefully carried them upstairs, wearing gloves to protect their hands from the sharp edges

https://files.peakd.com/file/peakd-hive/usagigallardo015/23wWrjVSohmVxRG7AhLTQcQXiXSdc5ahipbuF8fPx84VxnaYrUQkys9HkhR4idMgcvi4R.jpg

https://files.peakd.com/file/peakd-hive/usagigallardo015/23y8eyWtSdVcyXwSh48aJshvoPqBoQhvw4ZepYyDmF9VSrs8M2kn1SnAPqsNfJ33ouMmn.jpg

It may look like a short story in these pictures, but the construction took several months. There were many challenges, tiring days, and sacrifices behind this project.

Now, we are finally living in the house we worked so hard to build. It is not perfect, but it gives our family more security and hope.

Sometimes, the greatest blessing is not having a perfect home, but finally having a place where we can feel safer and start again.

Thank you for reading my post
@usagigallardo015

Hello everyone. How are you today? I hope all is well with you and your family. My wife and I continue to live a simple life at home without any outdoor activities. We just enjoy our everyday routine at home. Even though I am the primary caregiver for our autistic son and spend almost all day with him. And my wife still takes charge of cooking. So this post focuses on the lunch she prepared using fresh vegetables from our home garden—though not all of them, as some were bought from a mobile grocery truck. Let's see what my wife cooked for lunch. The main dish my wife cooked is egg fried rice with crab sticks, and the side dish is clear soup with minced pork and vegetables. For this egg fried rice with crab sticks, my wife used fresh brussels sprouts picked from the home garden. She also gathered chili peppers to make spicy fish sauce to eat with it.

And she gathered fresh yardlong beans and spring onions to use as ingredients for clear soup with minced pork and vegetables.

Since both dishes are simple to make, that's why I didn't include the recipes for both dishes. But I used cooking photos instead of instructions this time. This may not include all the steps of cooking.

Hello Hivers!

One of the things I enjoy at home is taking care of my plants. Among my collections are Caladiums, or what we call Gabi-Gabi plants. We have more than 10 varieties in our garden. They have different leaf colors, shapes, and patterns. Some have green leaves, while others have a mix of pink, red, and white.

My daughter also enjoys spending time with me in the garden. Sometimes, when I check my plants, she comes with me. We look at the leaves and see which plants have new growth. I also let her help me water some of them. These are simple activities, but I am happy because I can spend time with her.

I want my daughter to enjoy the things I love. I do not expect her to become a plant lover like me, but I want her to learn how to care for living things. I teach her not to pull the leaves or step on the plants. I explain that plants need water, sunlight, and proper care to grow.

Taking care of plants also like of raising a child. When I started collecting Caladiums, I learned that each variety has its own needs. Some grow well in certain places, while others need more attention. I cannot just leave them without care.

Raising my daughter is also a daily responsibility. She is still young and learning many things. Sometimes she listens, and sometimes I need to remind her again and again. There are days when I feel tired because I have many things to do at home, on the farm, and with my work. But I know that spending time with my daughter is also important.

I am not a perfect mother. I also make mistakes and sometimes lose patience. But every day, I try to become better. I want my daughter to grow up knowing how to respect others, help with simple tasks, and appreciate the things around her.

Our Gabi-Gabi or Caladium collection is not only about having many beautiful plants. It also gives me a reason to spend time with my daughter. While I take care of my plants, I also get to teach her small lessons in life.

I know that these plants will continue to grow, and my daughter will also grow up fast. I cannot stop time, but I can enjoy the bonding we have today.

For me, motherhood is like gardening. It needs patience, time, and love. We may not see the changes every day, but little by little, we can see how much everything has grown.

I mean, no plan of what to buy whatsoever. Thinking about the dish is an everyday challenge for us. Even for Mama it is also a challenge, lol. When we arrive in the local market, we'll just look at each other and ask "what's our viand today?" If our dog and cat can answer us back, we might ask them too because seriously!!! WHAT DO WE COOK? HAHA.

But today, I just get tired thinking coz there's not much fish in the market. There's a few but they are like gold, hahhh! I am craving for Milk Fish Paksiw but it is too expensive. My broke ass can't afford it yet haha. So I settled for Chicken breast, I feel like i'll grow wings anytime soon here. Lol. But then again, chicken meat is actually good. Its just that, I only know a few recipe for chicken breast. I definitely don't want Adobo now sooooo...

I'll be making Chicken Fillet, wait, can I still call it Chicken Fillet when I didn't use breadcrumbs or even egg in making it? Just APF and water ƪ(‾.‾“)┐, I can right? Let's just call it that, I am the one who cook it so I will decided for the name. HAHAHAHA no one, nobody can stop me! ,( /^ω^)/♪♪

So lets start by removing the bone and cutting them into strip, thinly. Then soak them in the in the water with salt. I heard soaking the chicken in salt water is awesome. Hahaha. I actually forgot the info, I just read them somewhere. Lol. I soaked them for like 15 minutes before seasoning them with salt, msg, vinegar, grated garlic and ginger. Why the garlic? I dunno, I just feel like doing so ¯\_(ツ)_/¯

I marinated it there for another 5 minutes before putting the all purpose flour. I then added a drop of water until the chicken was coated in flour. I ready more flour when i'm about to fry them then coat them some more flour. It should be breadcrumbs but I don't have it. And this is a budget dish so we have to make do with whats available. ᕙ(⇀‸↼‶)ᕗ

Here's the coated sliced chicken...then I heat the pan and used a used oil to fey my chicken. I mean, I only used it once so why not use it more yeah? Hihi. Look at that, its turning pretty and brown. I fried them in medium heat so that it won't get burn.

Minutes later, first batch is done! I think I did good with it. And coz its thin, frying them doesn't take much time, like 3 to 4 minutes each side.

Its time to enjoy its crispiness! I paired it with white rice. To be honest, it will taste good too with a ketchup, but then, the taste is already good and I actually don't want to ruin it. And so, I ate them with rice. ♪ \(^ω^\ )

Now, while preparing the Chicken, I was actually snacking on some sliced bread. And I put powdered chocolate in it BECAUSE WHY NOT? Hahaha. I really live powdered choco or milk in my bread. Have y'all tried it? I recommend it guys. ←(>▽<)ﾉ

His reason for doing this was because Da Nang has some of the highest governmental rates for business setup in the country and Saigon has some of the lowest. For about 1/3 the cost you can set up your company in Saigon but operate out of Da Nang, or at least that was what he though and presumably what he was told by his agent that helped him set it all up.

![image.png](https://files.peakd.com/file/peakd-hive/gabe.radke/23ynqamLXbchjigKAH7zyJNiH4QYdQz3m8SQxSnpkMMK5eATbC4U1Bg2eh4YDW4Vp8zey.png)
[src](https://thumbs.dreamstime.com/b/red-busted-stamp-graphic-isolated-white-background-distressed-word-printed-bold-letters-408791711.jpg)

He was attempting to leave Vietnam for a little vacation when he was stopped by Immigration and told that he had been flagged for business fraud and was banned for exiting the country. He was told via a translator that he had to go to Saigon and "face the music" for his falsehoods that he submitted in his company setup paperwork.

The ironic thing about where and how he was nabbed was that along with this being a vacation, he was also required to leave the country for a new visa because he was attempting to legitimize his visa and acquire something called a TRC which is a temporary residency card. Very few people have these cards and basically they enable you to never bother with visas again. Maybe he pushed too hard by trying to get to "top tier" of business visas when his paperwork was based on lies to begin with.

Things got bad fast, when he had his current visa cancelled and therefore his simcard was switched off and his access to his Vietnamese bank account was also cut off since all of these things are tied to your visa.

Now, to make matters worse, he cannot legally get accommodation anywhere because it is illegal for you to stay anywhere without a valid visa. He is in some shitbox hostel because someone knows the owner. This owner is taking a huge risk by allowing him to stay there without a valid visa.

According to his agent, who is at least partially to blame for this problem existing at all in the first place, he is waiting for an exit visa whereas after that is issued he will almost certainly be blacklisted from returning to Vietnam for some long period of time.

It's a real shame because the company that he established was a good one, it was one that was working, but he just HAD to cut corners setting it up and now all of that was for naught.

He was just waiting for his exit visa when yesterday, he found out that things are about to get a whole lot worse than they already were as he is not yet being allowed to leave the country and now the officials are demanding more and more paperwork, some of which is impossible to provide.

The documents should include:

The Enterprise Registration Certificate and all documents related to the establishment of the company.

Documents proving the company’s actual operating period and business activities, from the date of establishment up to the present.

Business contracts, purchase and sales agreements, and other documents related to the company’s business activities.

All receipts, invoices, payment records, and bank transfer transactions related to the company’s business operations.

All invoices, supporting documents, and records of goods and products purchased and sold by the company during its daily business activities.

Accounting records, tax declarations, financial statements, and any other documents related to the company’s actual business operations, if available.

That makes my head spin just looking at it and I know he cannot provide this information since almost all of his transactions were just buying things at the local "Wal Mart" and all of his sales didn't have a receipt involved in them.

This oversight on his part is just one more huge problem with him not taking the government seriously here and I think a lot of expats, especially ones from Western countries, just think they are going to be able to get away with.

Why does this happen? Well sadly I think there is an undeserved sense of superiority that exists with a lot of westerners and they feel as though they are from a "real" country and Vietnam's rules are things they don't have to observe. My friend would probably admit something like that. He didn't feel as though he needed to play by the rules because he didn't take the rules of this country seriously. A lot of people do this here and a lot of people find out the hard way exactly how terribly wrong they are.

While my friend will admit this is all his own fault, he is in a really bad situation. One where I have recommended to him that he contact his embassy for assistance.

My Version of Cooking Monggo

Happy Friday Hivers!

Monggo is one of the foods that you will almost always find in our kitchen. We love eating it, especially when it's cooked with coconut milk. I can still remember when I was in high school and my mother was running a school canteen. Monggo with coconut milk and sautéed monggo were already part of her menu back then.

AI-Edited Lead Photo Using ChatGPT

Monggo is commonly prepared in either of these two ways: cooked with coconut milk or sautéed. But whenever I cook monggo, I like to do things a little differently. I have my own version!

I love cooking monggo with fried fish, so of course, I started by frying the fish. While the fish was frying, I also boiled the monggo to get it ready for cooking.

After preparing all the ingredients, I transferred the pre-boiled monggo into a casserole, then added the fried fish and squash. Once it started boiling, I seasoned it and added the aromatics, including onions, garlic, and ginger. When the squash was already tender, I added the malunggay leaves and flowers. I was actually so happy when I noticed that the malunggay tree had flowers because I really love eating malunggay flowers!

Do you also enjoy eating malunggay flowers?

That's how I usually cook my monggo. I like adding fried fish because it saves me the extra step of sautéing. I can simply add everything to the pot and let it cook without having to sauté the ingredients first.

My mom actually enjoyed the way I cooked it. But then again, there are also times when she prepares monggo this way.

Everyone has their own way of cooking, and this is one of mine. It's simple, delicious, and always satisfying.

How about you? What's your own way of cooking monggo? I'd love to hear about it and maybe try your version, too!

This was such a common thing in Thailand that you had to have a strategy when getting into a cab.

You would stand and negotiate the price before closing the door of the cab. You would never sit down in the car and then talk about the price. You would ask if the meter was operating and take photos of the driver's required ID in the car and also make note of the emergency number that they are required to have posted in the car. You would memorize how to ask "are you using the meter?" in Thai even if you didn't speak Thai and you had to always be on your toes all the time just to get from one place to another. Do all of this and you would probably still get ripped off anyway every now and then.

This all changed when apps like Uber (now gone) and Grab (the largest by far) came onto the scene and I recall how the taxi drivers revolved against this new system existing and even going as far as to attack drivers who used the apps and to put up signs pretending as though taxi apps were illegal and was ripping off the cab drivers.

![image.png](https://files.peakd.com/file/peakd-hive/jack.russelle/23tmL4usTitDDG5QcLTeMi4vgqbfGioxZhUEAYFeJu1jsFq8epixpWrxUK6U8n3HibXAH.png)
[src](https://external-preview.redd.it/taxi-drivers-demand-govt-cancel-grab-service-at-airports-v0-NglB19H4VtZn-f0Kbs6PAE31PRJu-j1iyxddHAMJMso.jpeg?width=640&crop=smart&auto=webp&s=cc092b0872a2c9b99deadd81b906b1e4f080e7cc)

When these activities failed on the part of the taxi drivers they pivoted to push for Grab and other ride apps to be banned at airports and train stations and for a while that actually worked and the government gave in and did in fact ban them. Eventually they came back because you cannot stop progress and while not many will admit it, there was a general sentiment of "screw those guys" when thinking about how taxi drivers now all of a sudden had a drop in wages, or so they would claim.

Taxi drivers had been ripping people off since forever before these apps came to the mainstay and very few people, foreign or Thai, had a great deal of sympathy towards the screwballs that had been ripping off everyone whenever they could get away with it, for ages.

![image.png](https://files.peakd.com/file/peakd-hive/jack.russelle/23uFKTUAD3y8frWj8MDG9o3VWGXnxkb5sn27RvYweyaRbyCFfDQmcwMm6crX3MM8urnu3.png)
[src](https://encrypted-tbn0.gstatic.com/images?q=tbn:ANd9GcQ38WcmqfSNUix6nF7v50zXLJNbgskLx6JxTk5qbO4V8psMcqV0mEbK-JjO&s=10)

There are still a few holdouts in making these apps illegal such as in Phuket where the "taxi mafia" is very strong to the point where they control the roads. There is a story about how the taxi mafia in Phuket successfully blocked the pre-arranged transport that the US Military had set up for their soldiers that were coming ashore for R&R. The local government claimed there was nothing to do but all this really accomplished was to showcase how very strong corruption was in Phuket and this incident brought about changes to the taxi structure on even that very corrupt island.

Grab is still banned at many airports including in Chiang Mai, where I live, but they came to an agreement about the fares and how they all have to be posted in public and the drivers themselves are not allowed to approach people for rides. It all must be sold through a controlled ticketing area where all fares to anywhere in the city are posted.

You can save a few bucks by walking out to the street next to the airport but honestly, it isn't worth it. This regulation was fair, and I use it even though Grab is cheaper.

But the fact remains that the apps and the eventual acceptance of the taxi drivers has made getting around in this country a much better experience. It used to be that more often than not that a taxi driver was going to at least attempt to rip you off every single time you tried to hail one. If it was ever raining when you were looking for a cab you can basically forget about getting a fair price. This scam of knowing that you have no other choice than to pay what they were asking was everywhere and it would happen to Thai people as well.

The apps put a stop to all of that and now there still are price fluctuations depending on time of day and even weather, but the areas where there are taxi ranks are basically not used by anyone anymore. I am delighted to hear that there has been a dramatic decrease in the amount of Tuk-Tuks as well, because those guys were the worst of the worst when it came to ripping people, especially tourists off.

It's really sad when animals dies for no reason even when they're healthy. I would be crying for weeks if one my cat died and I don't really want to think about them not being here anymore. It's sad that the kittens didn't survive. Our second post is made by @usagigallardo015. That is a really big flood, I hope everyone was safe. In Cambodia the floods weren't ever that bad, the only bad thing that happened in my village was that it rained almost every day. It rained so much that trees fell and landed on power poles which caused power outage and the lighting striking the road and stuff like that. I like drawing or making forts when it rained and it always made me feel nice and cozy.

The third post on this list is made by @luueetang. i don't think I've tried Malaysian food before or I might have but just forgotten. It looks good and My family also likes the fried peanuts. Back in Suriname, my mom would always hide the peanuts because my dad would eat them all in one bite. My mom would hide them in bowls, the oven and other places but he would always find them. The last post is made by @shikika. Back in Cambodia, my mom and I would always like to buy online clothes like t-shirts, pants, and other stuff. My mom would scrolling and find a lady on live in Facebook calling out numbers to clothes for who ever typed in the number first.

(ᴇxᴄᴇʀᴘᴛ) This furry creature was taken cared of my by younger sibling until it got pregnant with its mate. She already spent thousands for her couple cats. She did not regret spending every single cent of it as she showered her undeniable love, care and support for these cute creatures. She thought of doing a business of breeding the couple cats she raised but she ended up being failure as the first kittens born to these couple cats suddenly died after it was born while the other one died few days later. It was tragic that her thought of return of investment was lost because of the death of the kittens.

Now I've never heard of Sambuyawan festival before but everyone seems to be having fun watching the fireworks, eat yummy food, and spend time together. The second post is made by @godslove123 and his post is about a day preparing delicious snacks for Rosary activity. When there is a party, a religion gathering, or just any get together needs a good food and snack, and the drinks of course. Also when preparing those food there is always a challenge like having to travel and get the ingredients because it ran out or didn't have anyway.

My husband's family invited us to go to the municipality where the festival was being held. Of course, we agreed because it was a good chance for us to go out and enjoy the night together.|

A Blessed Day for Rosary Activity and Preparing Delicious Snacks
by: @godslove123
(ᴇxᴄᴇʀᴘᴛ) This Month of October we celebrated the Month of Rosary as part of Catholic Tradition and culture. As for that, prayer activities on each house will be held and being done by Church active members. But giving some snacks is not really a traditional way and it is for the house if they want to give something to eat for the visitors who joined Rosary Activity.|

My Favorite Plants: My Colorful Fittonia Collection
by: @verbytells
(ᴇxᴄᴇʀᴘᴛ) I want to share my favorite plants in our garden. The Fittonia plants. I love them because they are easy to care for, grow fast, and can multiply easily. I can also sell them to people who need ornamental plants for landscaping. I think I became a plantita because I grew up around plants and farming. Since I was young, I was already exposed to gardening.|

A family trip to a small rural temple in Chiang Mai, Thailand
by: @kriang3teejoe
(ᴇxᴄᴇʀᴘᴛ) **There's a small temple on a mountain in my district.

**👩‍💻 October 5th - October 12th, 2026 🌏**

Hi, everyone. @Sakana here. I'm here with 3 posts from some amazing people in ASEAN Hive. The first post is made by @crazygal. It's good to help keep the school clean and my old school also does that too. Back in Cambodia, every Thursday my whole school would be assigned a task like sweeping the class rooms and other stuff. Sometimes after we're done with the school, my school would go around an help clean up the neighborhood.

The next post is made by @luueetang. Those flowers are very pretty and I actually know them. I'm pretty sure that my country eats this flower for some reason but yeah, I know really feel like it should be eaten although I have tasted it before and its not that bad. I like the purple color its very pretty. I like a lot of flowers including this one, and I like about ten types of flowers.

The last post is made by @jessmcwhite. I love Orchids a lot and its mainly because my mom use to plant them around my house in Cambodia. That is a very big place for plants and flowers. My mom actually had a light green orchid before but its probably gone since no one has been taking care of it. A few weeks before I came to the USA, my family and cousins actually went to a place kind of like a garden/zoo but a really big one with orchids and animals together.

(ᴇxᴄᴇʀᴘᴛ) Coldest of the atmosphere is waiving. Its normal here everyday, even the sun shine but the surrounding is cold. We don't have to buy aircon because it's colder than it. Since December is coming,I'm sure the coldest weather may come and also the rain. So we need to be clean and secure the place from mosquito laying eggs causing dengue issue.

(ᴇxᴄᴇʀᴘᴛ) Good Morning to all my wonderful friends here @asean.hive. I hope that all of you are doing well and are fine. Today, it is my rest day. I usually spend a bit of time doing a bit of cleaning around the house and organizing things that have not yet been organized. I got myself a water hyacinth a couple of months ago ago and it has grown a lot there are a couple of them in my water tank at this point of time. Flowers have suddenly blossomed. I read in the news that these flowers only last a maximum of two days.

Today was such a nice day, and another day too to achieved goals and at the same time enjoy the little things that surrounds us. I am currently here in Canhaway in our Senior Pastor's house.
